Equipment

  • Pan
  • Sieve
  • Whisk
  • Spoon or spatula

Ingredients

  • 3 eggs
  • 3 cubes of butter
  • Salt

  • Creme fraiche

Method

  1. Put your eggs in a bowl and whisk
  2. Once whisked, grab a pan and put the eggs through a sieve
  3. In the pan with the sieved eggs, add the butter
  4. Put your eggs on a high heat until the butter is almost melted with a spoon or spatula
  5. Lower the heat
  6. Every 30 seconds you need to remove the pan from the heat “until it becomes a nice creamy texture”
  7. Add some salt, creme fraiche, and beat lightly

Now all you need to do is serve it. Chef Marsh adds chives on top, but this is optional.

He also stresses that you should not season your eggs too early and only do it as the very last step, number 7. He also adds caviar if he is feeling fancy.

Eggs – no matter how you want to cook them – are a great way of adding protein and nutrients to our daily diet. According to Harvard Health: “They are relatively low in calories and saturated fat, and rich in protein, vitamins, minerals, and other healthy nutrients like lutein and zeaxanthin, which are good for the eyes, and choline, which is needed by nerves and the brain.”

Many people are concerned about eggs and cholesterol, though. Yet if you stick to a certain amount, you should be fine. The health experts at Harvard Health state: “The general recommendation is to limit your cholesterol from food to no more than 300 milligrams per day.

“A single large egg contains more than half of that amount. The cholesterol comes from the yolk, so many people choose to eat only the egg white.”
